Back in the early 80’s, while growing up in North Jersey, one of our owners, Joe Cannistraci, met Sefton Stallard. They became lifelong friends. After graduating from college, Sefton attended culinary school at Le Cordon Bleu in Paris, along with high school friends Bruce and Suzanne. After graduating, Sefton traveled and worked for various restaurants such as the respected “Patina” in Los Angeles, while Bruce went on to co-own, with his brother Eric, what is now the legendary Blue Ribbon Brasserie on Sullivan St. in Greenwich Village. Sefton eventually ended up back in New York and was placed at the helm of the kitchen of the Blue Ribbon Bakery. The Blue Ribbon Empire has since grown to over 16 locations. So where does fried chicken fit into the story? Twenty years ago, the Blue Ribbon brothers developed a unique spice blend and method of breading chicken that became so good, an American classic in a French inspired brasserie was born! The dish became a huge underground New York City cult classic, loved by the likes of every day people to Hollywood celebs.
