Our all time favorite rosé! Very pale pink. Spicy orange, strawberry and floral aromas show very good clarity and energy. Tangy, sappy red fruit flavors are enlivened by dusty minerality and a hint of white pepper. Finishes with very good cut and length, leaving orange zest and floral notes behind.
After macerating for 12 hours, the wine ferments for 15-20 days in small wooden vats at 16-18ºC. They keep it on the fine lees and work it for 3 months in order to heighten and enhance its sensory qualities. Then it is stabilized by cooling, filtered and bottled. Only a small percentage of the wine, around 20%, goes through malolactic fermentation to add some texture to the mouthfeel and yet maintain its crisp, refreshing style.
